The food that you present to your clients reveals your identity and somehow your values. In my point view, it is fundamental to please people with food, especially when they come and pay for it. Therefore it should be welcoming, nicely presenting, have great flavours and show case in the best possible way your seasonal, fresh and local ingredients and tradition.
I believe that they best way to feel the essence of your place is to come in your own kitchen, with your equipment and local food and train your staff in their usual environment. Through my decade of experience in giving cooking classes, I am comfortable to work with larger group of kitchen staff (up to 15).

"Nadege was heaven sent to upgrade our kitchen. She worked tirelessly with our cooks to teach them new recipes and preparation methods  - especially raw, vegetarian and gluten free alternatives to our existing menu. Nadege was thorough in dissecting our menu and understanding our existing produce so as to maximize local in the food that we serve. With this preparation she came armed with a large recipe book that she worked through with our kitchen staff teaching them and experimenting with new dishes.

She adapted well to our kitchen and with much cheer introduced the Chole Chef's to an array of new dishes which not only tasted good, were healthy and fabulously presented. She worked with love and managed to encourage our kitchen staff to be bold and resourceful in trying out new menus. They all worked hard and Nadege won their hearts with her gentle ways,new ideas and empathetic training. Together with the Kitchen they were able to blend the new with the old and feed a full house of 25 for a period of a week, three wonderful new and interesting meals per day. Nadege we thank you for coming into our lives."
